In the cellar
- Full grapes press in pneumatic press
- Wine put in wood barrel (Stockinger barrels)
- Start of fermentation with indigenous yeasts
- Regular stirring (Barrels of 228, 500 and 600 liters)
- Complete vinification including malolactic fermentation
- Parameters checking before bottling. Lightest SO2 possible regarding wines PH
