In the cellar

  • Full grapes press in pneumatic press
  • Wine put in wood barrel (Stockinger barrels)
  • Start of fermentation with indigenous yeasts
  • Regular stirring (Barrels of 228, 500 and 600 liters)
  • Complete vinification including malolactic fermentation
  • Parameters checking before bottling. Lightest SO2 possible regarding wines PH
